Can you name a better trio than peanut butter, raspberry and chocolate? Nope. Neither can we. These no-bake bars are plant based, gluten-free, dairy free, refined sugar free… and (most importantly) delicious.
These No Bake Peanut Butter Bars are the perfect sweet treat for lunch boxes, to keep in the freezer for a quick and easy dessert or when someone calls last minute and asks you to bring some baking to a function or BBQ. Here at Fix & Fogg, we love a little thing we like to call “lunch dessert”. These are our current favourite way to get in that much needed sweet, peanut buttery fix after lunch.
For these bars, we love using our Super Crunchy peanut butter for those added crunchy pieces that pair perfectly with the zest of freeze dried raspberries, layered between a sweet & salty base and a dreamy chocolate topping. We also like to fill these bars with our Dark Chocolate peanut butter and freeze dried strawberries for a classic summer flavour combination, or our Coffee & Maple peanut butter and cacao nibs for a bittersweet, crunchy textured filling. They are perfect for making ahead of time and keep extremely well in a sealed container in the freezer.
For all our paleo friends, these bars can be easily modified to fit in with a paleo diet. Simply swap out the peanut butter in the filling for our Crunchy Almond butter, and replace the peanuts in the base with any other nut of your choice. Walnuts, cashews, macadamia nuts or just almonds work really well in this recipe. And make sure to top off these bars with the refined sugar free version of the chocolate topping.
