The basic premise of this diet is simple: Eat whole foods. Avoid processed foods. This is one of the many aspects that make the diet so popular. Its message is simple. In a nutshell, the Paleo diet consists of grass fed or free range beef, pork, lamb, poultry, game meat, fish, seafood, fresh fruits, vegetables, seeds, nuts, and healthful oils (olive, coconut, avocado, macadamia, walnut and flaxseed). These foods are high in the beneficial nutrients required. The basic Paleo diet is merely a guideline that you have to adjust for your personal preferences and tolerances. This is why I propose The Modern Paleo Diet – the Paleo diet adjusted for our modern diet. Celiac Disease – You Can Still Live a Normal Life

Celiac disease is a disease of the intestinal tract caused by the presence of gluten in the diet. An allergic reaction to the gluten causes a breakdown in the structure of the villi which line the internal surface of the small intestine. These small projections typically provide a large surface area for the absorption of nutrients from digested food. In a person with Celiac Disease, however, the inflammatory reaction to gluten in the diet reduces the surface area to such an excess that the absorption of vital nutrients is strictly restricted, resulting in malnutrition and a wide range of symptoms.

Celiac Disease (also known as Celiac Disease, Celiac Sprue, Non-Tropical Sprue, Ideopathic Steatorrhoea or Gluten-sensitive Enteropathy) is a genetically determined allergy to the protein gluten, which is found in a number of closely related cereal grains (wheat, barley , rye and oats). Note that there is open debate about whether some Celiacs can tolerate the gluten derived from oats. I will discuss this in another article; but generally, if you have just been diagnosed as a Celiac, it is best to avoid all possible sources of gluten.

Gluten Intolerance is at the mild end of the Celiac Disease spectrum. Because of the wide range in severity of symptoms in individuals it can be really difficult to distinguish between the two. However since the treatment (complete exclusion of gluten from the diet) is the same, the distinction is really only academic.

In affected infants who have just been weaned onto cereals, symptoms are commonly diarrhoea (large, pale, foul smelling bowel motions), abdominal bloating, colic and poor growth. In adults it manifests as bloating, abdominal pain, alternating diarrhoea and constipation as well as depression, fatigue and even infertility. Around 1 in 250 people suffer from some form of gluten intolerance.

It is interesting to note that around 20% of celiacs are also lactose intolerant. On exclusion of gluten from the diet some of these people regain the ability to tolerate lactose.

The only treatment for Celiac Disease is the complete exclusion of gluten from the diet … permanently. Although the intestinal lining can completely regenerate the person must stay clear of gluten for the rest of their lives (there is no 'cure'). One must be very careful in pursuing a gluten free diet since apart from the obvious sources of wheat, oats, barley and rye, there are many food additives such as flavors, thickeners, sweeteners etc., which include derivatives of these grains (particularly wheat ) in their composition. It is vital to read food labels very carefully to ensure that there are no gluten containing ingredients. Preferably look for the "Gluten Free" sign on the packaging.

It is still possible to enjoy a wide variety of non-gluten foods and there are many great recipes available. (You will find a range of recipes in future articles.) The major difficulty is when dining out. Ensure that you check with the waiter about the exclusion of gluten from your meal. With a little care and discipline you can lead a completely normal life with Celiac Disease.

Gout (also known as gouty arthritis) is a condition caused by a buildup of the salts of uric acid (a normal byproduct of the diet) in the joints. A single big toe joint is the most commonly affected area, possibly because it is subject to so much pressure in walking. Attacks of gouty arthritis are extremely painful. Men are more likely to be afflicted than women. Diets heavy in red meat, rich sauces, shellfish, and brandy have been linked to gout. However, other protein compounds in foods, such as lentils and beans, may play a role.
The main symptom of gout is waking up in the middle of the night with an acute throbbing pain in the big toe, which is swollen. The pain lasts for around three or four hours and then subsides. However, pain in the same toe usually returns within a few months.

Gout can be controlled by with prescription medications and diet. Note: Please consult with your physician before taking any medications. The application of ice or cooling lotions helps alleviate pain and swelling during an acute phase. In some cases, specially-made shoes are prescribed to relieve the pain associated with gout.

How to Eat Fiber



Fiber is a critical nutrient for your colon and overall health. You need to eat equal amounts of insoluble and soluble fiber. Most people only eat around 8 grams or less of fiber each day. The amount you need to eat is around 25 – 45 grams. This is a lot of fiber and you will need to introduce it slowly into your diet. You may experience gas when you eat more fiber. But this will pass as your stomach gets use to eating more fiber.

Alert: If you have any serious gastrointestinal illnesses, check with your doctor before adding more fiber to your diet.

One major benefit of fiber is that,

Fiber stimulates pancreatic secretions – enzymes and bicarbonates -which help you digest your food better and promises undigested protein from reaching your colon.

When you are constipated, your fecal matter remains in contact with your colon walls longer. Undigested protein that is embedded in the fecal matter start to decomposes and putrefies. This undigested protein and putrid matter serves to feed bad bacteria and changes your colon environment into a toxic generator.

If you have not been eating a lot of fiber in the form of vegetable, fruits and grains, you need to add these foods to your eating habits little by little so your body gets use to more fiber.

The more fiber you eat the more vitamins and minerals are lost and eliminated in your stools. What this means, is you need to compensate for this lost by eating more nutritious foods and or by using supplements.

Tip: Provide yourself with natural forms of fiber, such as vegetables, fruits, and legumes. Stay away from the complementary forms of fiber such as, powders or pills that may help in relieving constipation but do little to provide you with other nutrients those natural forms of fiber provide.

Supplemental fiber granules, powders, or pills can become addictive.

Limit your use of fiber that comes from grains. I know you have been told you need to eat a lot of bran, whole wheat products, Cereals, oats, oatmeal, buckwheat, unprocessed bran, rice bran, and so on.

In their recent book, 2001, Electrical Nutrition, Denie and Shelley Hiestand points out that our digestive system was not designed to process grains. When we eat food, our digestive system was designed to ferment food to break them down and make their nutrients available for our bodies. The Hiestand's continue,

"Our digestive tract, like that of the grazing animals, is almost completely incapable to ferment a seed-head (grain), whether it is whole or ground ground up as in flour … when we try to eat grain, the innate frequency of the seed-head can only go into storage-in other words, lay down cellulite … This is why in agriculture to fatten up the hog or cattle, we feed them grain. .. they take the most energy to digest, and we get little or nothing from it except large thighs, butts, and bellies. REMEMBER THE OLD FARM SAYING GRAINS FOR GAIN, PROTEIN FOR PRODUCTION. be considered toxic. "

Remember to stay away from processed fiber that you find in drugstore shelves and go to a farmer's market and get fresh fruits and vegetables. This is the fiber that will keep your constipation away and bring health closer.
